Authentic Taqueria Salsa



I learned this recipe from my Latina friends. It super fast and easy to make. This recipe can be adapted in anyway that you want. I even did this with can tomatoes! 

1 Onion, yellow
2 Tomatoes
1-2 Jalepeno's or Serrano's
1 Garlic, clove (Peeled)
3 Baby Bell Peppers (Yellow or Red) (For Color and Sweetness)
3 Cilantro, good handful
Salt to taste

1. Stick the first five ingredients in whole (I.E  with stems) into a pot of boiling water, enough to cover. Let cook for 15 min or until tomatoes blister.
2. Now with a slotted spoon or tongs retrieve ingredients from the pot and put into a blender ( You don't need any of the cooking liquid, the tomatoes provide the water you need). Remove tops of peppers with knife to remove the stems, place in blender as well. Blend until smooth.
3. Add handful of fresh Cilantro, and about a tablespoon of salt to taste. Blend until smooth.


 Enjoy warm with chips, tacos, or burritos. Or let the flavors become delicious in the fridge to chill.  Lasts about 1 week in a air tight container.
