Arancine (Rice Croquettes)



In Italy Christmas and New Years are celebrated with food. Every night is a feast that you share with family. Where the joy of coming together and working as a team is celebrated. This year was no different in our home, even if it was under construction. 





Arancine
2 garlic cloves
1 onion 
1 kg rice (2lb)
1.5 L hot water (8cup) 
3 saffron bags
1 cup oil
3 tsp salt 
1/2 lb butter

1) Sauté garlic, onion, and oil until translucent
2) Add rice, water, saffron and salt to taste. 
3) Cook rice over medium heat for 16 minutes
3) Add butter
4) Spread rice on cookie sheet and let cool. 

Pea Filling
2 cups Green peas
1/4 onion chopped
1 garlic clove ]
1tbs olive oil
1tbs butter

1) Saute the above ingredients. Makes about 2 cups of sautéed peas. This will be your veggie filling. 

Cheese Filling
16 oz cubed mozzarella








1) Form arancini, by filling your palm with 1/4c of rice. Push down a dimple and add cubed mozzarella, and 2 tsp pea mixture. Add a pinch or tablespoon more of rice on top. Roll rice in hands to form cone or ball shape. 



                                                    

Now you are ready to roll and dunk! Then take these kids to a hot jacuzzi to get golden and delicious!

Breading
3 bags Panko or breadcrumbs
Flour
Eggs


2) Roll arancini in flour, eggs and Panko crumbs
3) Repeat in eggs an crumb
4) Fry in hot tub of olive oil “must swim” until golden
