Cowboy Casserole

This Casserole is fun and easy to make. I was told to make dinner without wanting to go grocery shopping I used what was in our cupboard.


Chili
1 can Pinto Beans
1 can Black Beans
1 can Tomato sauce
1 can El Pato (salsa:yellow can)
1 Onion
1 can corn
1 can crushed tomatoes
1 tablespoon Taco Seasoning
1 tablespoon olive oil
1/4c Cheese*


Cornbread Topping
3/4c Cornmeal
1/4c Flour
1 1/2 teaspoons Baking Powder
1 tablespoon Sugar
1/2c milk (I used Soymilk)
1/4c Butter (softened)

Lets Get Cook'n!
1. Start by putting oil in a pot with chopped onions. Cook till translucent. Add Tomatoes, sauce, and salsa. Let simmer for 5 min on Medium/High. Add Taco Seasoning. Add Beans and Corn. Let simmer for 15 min. Season to taste. While Chili is simmering make topping.

2. To make the scrumptious topping: Mix all ingredients till be comes a thick but not very sticky dough. Add more cornmeal if to wet.

Lets BAKE!
1. Put cheese on bottom of a casserole.  Poor Chili into a large casserole dish. Top with dollops of "cornbread topping" should cover most of the dish.

Bake at 450 degrees
20 min

Or till browned.
