Mexican Hot Chocolate Snickerdoodles (Vegan)

These yummy chocolate cookies are a little different in that they are spiced up with a little cayenne pepper and cinnamon. Quite a nice match actually. :) 


Cookie Dough:
1⁄2 cup Canola oil
1 cup Sugar
1⁄4 cup Honey or Maple Syrup
3 tbs Almond Milk
2 tsp Vanilla Extract or Paste
1 2⁄3 cups fFour 
1⁄2 cup Unsweetend Cocoa Powder
1⁄2 tsp Baking Soda
1⁄4 tsp Salt
1⁄2 tsp Ground Cinnamon
1/2 tsp Cayenne Pepper (or chili powder)

Topping:
1⁄3
 cup Sugar
1 tsp ground Cinnamon

Mix all cookie dough ingredients together, until evenly incorporated. Roll dough into walnut size
balls. Roll each ball into a mixture of the cinnamon and sugar. Place on cookie sheet 2" apart. 


Bake @ 350F for 10-12min.
